Can I edit the schemes somewhere?

No but you can first edit Homebrew scheme with Terminal.app, then use it in Core Shell:

Require Core Shell 1.7 or later. Although Core Shell has 9 built-in color schemes, but you may have custom themes already sit in Terminal app, and want to use them for Core Shell.
